Brunkow Cheese Coeur de Fayette. A small format, soft-ripened bloomy rind. Bright and tangy with a dense, pudgy pate. As it matures, it ripens to a more rich and buttery consistency and of course it's in a cute heart shape.
Carr Valley Gran Canaria Gran Canaria is a flagship cheese at Carr Valley, so it’s one you should definitely know about. Inspired by a trip Master Cheesemaker Sid Cook and his wife Lisa made to the Canary Islands where they fell in love with a cheese marinated in olive oil, Gran Canaria is mixed-milk cheese that is aged 2 years and cured in olive oil. Gran Canaria has flavor notes of gin balanced by hints of brown miso and a sultry brisket gravy that make just one piece impossible.
